Baking cookies without an oven

So, as you all know if you've read a previous post, I am attempting to find the best way to bake without an oven. I am currently living in a travel trailer and have missed baking certain things. As a long-time baker I have missed being able to make certain things. As I promised, there will be another post about baking biscuits but today let's attempt cookies. To make things easier, I used store bought dough and we're attempting to bake in the electric skillet today.

Here's the cookie dough I ended up using. Let's bake. I found a little cookie sheet from a local hardware store which is meant for toaster ovens, I believe, which fits just perfect in the electric skillet. I placed parchment paper in the bottom (no extra dishes for me tonight) and we are ready to go. I guess I should mention here that I did put the lid on to cook but since you can't see what's going on under there, I didn't see the point of taking a picture with the lid on. I also used a small rack under the cookie sheet to keep the cookies from sitting directly on the bottom of the skillet. And we're off...

Well, after 45 minutes (way too long) I pulled the cookies out. They still looked a little under-baked but I've found with store bought dough this is beneficial since they seem to harden faster than scratch ones. They tasted delicious but who wants to wait 45 minutes for fresh cookies? Not I. New method needed. Have a great day!
